Chocolate Chip Pumpkin Cookies



Ingredients

1 cup canned or fresh cooked/mashed pumpkin
1 cup organic sugar
1/2 cup cold expeller pressed olive oil
1 egg
2 cups organic whole wheat pastry flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon sea salt with trace minerals
1 teaspoon of milk
1 tablespoon vanilla
2 cups organic dark chocolate chips

Combine pumpkin, sugar, vegetable oil, and egg and stir. Dissolve baking powder in the milk and add to the mixture. Stir in flour and dry ingredients. Mix. Stir in vanilla then chocolate chips.

Bake in 350°F oven for 12 minutes or until done.

If you make from fresh pumpkin, be sure to roast the pumpkin seeds when baking the cookies. We like to soak them in a bit of Tamari and roast for about 20 minutes. They aid in inflammation.
